My fabulous pilates studio HIP is hosting a 90-day clean eating challenge. Basically it means i have to cut out everything i love (aka jellybeans) and eat fresh, healthy, nothing can have more than 5 ingredients if its from a package things. We’re only a few weeks in- and i’ve already fallen off the bandwagon more times then i can count on one hand (hello easter candy and girl scout cookies). But i have managed to do a few meals right. Here are my two favorite slow-cooker clean-eating meals.
Southwestern two-bean chicken was quick, easy, and delicious over corn tortillas. Throw some avocado on-top and it didn’t even taste like it was “clean eating”.
The other delicious slow-cooker recipe (i LOVE our crock-pot. it gets three cheers for making our house smell delicious, and making mike think ive slaved away ALL DAY) is pulled pork sandwiches. Even lexi loved this pulled pork. Since BBQ sauce is a no-no this was the perfect alternative with a bit of a delicious kick.
