taco turkey salad.

While hunting for recipes I always have to rate them based on a few things a. is this something a horrible chef like me can handle? b. where is it on the taste-scale? c. can i make this one-handed since my 1 yr old has to “see” everything i do in the kitchen?When I stumbled across this taco turkey salad recipe i knew i’d found a winner- not only is it fairly healthy, but its ridiculously easy to make, and has officially make it into our weekly arsenal of dinners.

Here’s what you’ll need:

  • 1 tbs olive oil
  • 1lb ground turkey
  • salt & pepper
  • 16oz jar of salsa
  • 2 tbs sour cream
  • 1 head romaine lettuce
  • 1 can rinsed pinto-beans
  • Tortilla chips
  • 1 avocado
  • 1 cup cheddar cheese
  • sliced black olives

Directions:

Heat the olive oil in a medium skillet, add the turkey & season with 1/2 tsp of salt & pepper. Cook the meat, breaking it up into small chunks. Pour off any excess liquid and stir in half the jar of salsa. In a small bowl combine the rest of the salsa & sour cream. Divide the rest of the ingredients into bowls, top with the meat & dressing mixture. Serve & devour.
