Last week I mentioned popsicles have become a huge part of our lives lately. . . well not just for lex. I started making adult versions to sneak on walks, into the sandbox, and to the beach. Bellini Pops. AND let me tell you- they’re delicious. Dangerously delicious.
– 1 cup sparkling wine or champagne. I used sequin wine because a. its delicious and b. the name really “speaks” to me.
– 1/4 cup orange juice (i also use strawberry, banana, orange juice. And that really takes these puppies up a level).
– 2 cups frozen peaches
– popsicle molds (we love these).
Throw everything into the blender. and blend, blend, blend.
Pour into popsicle molds (and if you happen to have some extra left over- feel free to pour into a glass and enjoy).
And if you want to get extra fancy (minus the bright green plastic) dunk it in your extra wine!
