hello erin »

hello popsicles.

I feel like popsicles have made a come-back in a big way lately. They’re fun, fresh, and totally perfect for hot summer days. We’ve gotten into making (and eating) these a lot- and they’re the perfect easy summer staple.

What you’ll need:

– Popsicle molds (we love these from tovolo because its easy to make one or all six. and they can go separately into the freezer-meaning i didnt have to clear a whole shelf off just for Popsicles).

– Your choice of juice. We’ve been using strawberry & peach lemonade.

– Fresh fruit. Cut into small chunks for a special little treat at the bottom.

These are insanely easy. Even Lex gets in on the helping action when making them. Pour the juice in the molds, leaving room at the top for fruit. Then sprinkle the fruit at the top, insert the stick. . .

Throw them into the freezer, let them sit and BOOM. popsicle heaven:

Colleen - Yum! Can you believe I’ve never thought to use lemonade in my Popsicle? It’s perfect! You’re brilliant! Lex looks like she looooves them? I love watching Owen eat a popsicle, especially when he says “Mmm, mmmm, mmm” while he eats it!

Mayumi - I’ve been on a popsicle kick lately, too, and I LOVE these molds:

They seem smaller than the ones you have, but W really likes the handle for gripping.
