hello blackberry mini-pies

after blackberry picking we debated what to do with all the blackberries- i voted for blackberry margaritas, mike voted for blackberry pie, lex sided with mike (traitor). We decided on making mini-blackberry-pies in ramekins since everything is more delicious in mini-form. We wanted to make them with less sugar because the blackberries are SO sweet and delicious and fresh!

 

 

 

– fresh blackberries

– 1/2 cup sugar

– 3 tbs flour

– 1tbs lemon juice

– 1tbs cold butter (cubed)

– frozen pie crust (yup, we 100% took the easy way out!)

 

 

 

 

Pre-heat the oven to 375. Rub the cold butter on the inside of the ramekins. Then line with pie crust.

Combine the blackberries, sugar, flour & lemon juice. And get your assistant to stir, stir, stir.

Fill each ramekin with delicious blackberry-ness:

Top off with more pie crust. Cut holes in the top of each to allow proper venting.

Check your face for anything that might give away you’ve been taste-testing while cooking.

Bake at 375 for 45 minutes (or until crust is golden brown). The smell will be divine i promise you. These little guys were SO easy and SO delicious and devoured SO quick in our house. Lex refused to eat anything all weekend long (i swear she ate maybe 4 animal crackers over the course of the weekend #teethingisthepits) which meant more pie for me (which was much needed after a bad teething weekend).
