hello erin »

mini-pita-pizzas.

Hey party people! Today i’m joining Colleen from Meet the Sullivans for a kid testesd & mom approved meal!

lets talk food. i love pizza. like looooooove pizza. i could have it for each and every meal and be the happiest camper ever. I also love easy, simple, dinners that i can throw together (bonus if lex can help) in a pinch and are still delicious. enter pita pizzas. These babies are a weekly staple in our house. They require minimal effort, lex “helps”, and they’re the easiest thing to throw together in a pinch.

– mini pita pockets

– toppings!

* we love making pesto chicken, bbq chicken, cheese, and pepperoni.

Assemble the pizzas. This is where lex helps. She’s in charge of putting all the toppings on. She’s always really careful to taste-test everything first.

Once your pizzas are assembled throw them into the oven at 425 for 10-15 minutes (just long enough for the cheese to melt). We have a pizza stone that gets quite a workout around here- but you can lay them directly in the oven, or use  pan! We even BBQ them some nights!

Take them out. let them cool. and chow down!

Emily - These are awesome! And I love that Lex gets to help! Owen is quite the little helper these days and although involving him can be a mess it is so much fun!

Courtney - Man, I use to make pita pizzas all the time and they never looked as appetizing as yours. I love that Lex helps! I love getting in the kitchen, can’t wait until Aria is old enough to help. That cage bird bib is adorable too, is it a superbib?

julie - Why do I never think to make pizzas? I love that you used pitas! Also, I can’t believe that Lex sits on the counter like a good girl. Hudson would be ALL OVER the place! p.s….where is her super cute place mat from?

EHayes - Yum! And what a cute taste tester!… we make Naan pizza a lot, love how doughy the naan is, I think it’s time we let Ashlynn eat some too (girls finally got teeth!)

Vanessa - Sweetest little helper ever! I sometimes make little pizzas on tortillas, but I think pitas would be wayyyy better! Just added them to my shopping list 🙂

Rachel - Such a fun {and tasty!} idea! Way better than the frozen pizzas I’ve been giving my little guy lately. 😉 Cannot wait to try these! And how cute is your little one?

Sara - My mom totally makes these all the time! I so need to get on board because these look AMAZING. What do you do for the BBQ chicken?
