no-bake grasshopper pies.

St Patricks Day is right around the corner (monday march 17th to be exact. I fully had to google it because I’m horrible at dates and function much better in generic terms like “holiday seasons”). While we love celebrating with things such as green beer and more green beer and a shamrock shake or two i decided to mix er up a bit this year. Which is where these no-bake grasshopper pies come in. Any recipe that involves 1. not baking 2. marshmallow creme and 3. oreos is a definite winner in my book. To make these “mini” i threw them into ramekins. but i can guarantee that one giant pie would be delicious. . . so would a bunch of mini mason jar pies. Totes your call.





1 package of oreos (or half a package if you darling husband got into them before you managed to).

1/2 cup melted butter

1 tub marshmallow creme (the 7oz size).

1 tsp peppermint extract

6-8 drops green food coloring

1 tub cool whip (the 8oz size).


* throw the oreo cookies into a food processor and blend, blend, blend. Scoop a few spoonfuls into a separate bowl (to save for garnish later). Add in the melted butter to your crushed oreos.


Line your ramekins, or pie dish, or mini-mason jars with the oreo cookie butter mixture. . . and start drooling as you place the containers into the freezer for about 30 minutes.


To make your filling blend the marshmallow creme, peppermint extract, and food coloring together. Fold in your cool whip.


Spoon the filling into the frozen oreo containers (make sure the oreos are frozen so the filling doesn’t stick to it), sprinkle the tops with those oreo crumbs you saved earlier. Throw everything back into the freezer for a few hours. . . or if you’re feeling SUPER crazy. eat them then and there. Either way you won’t be sorry.
